Dilution(East of Lake)

Dilution has been part of Suzhou’s cocktail scene since 2018, opening at a time when dedicated cocktail bars were still relatively rare in the city. Today there are plenty to choose from, but Dilution remains a favourite with serious cocktail drinkers and long-time regulars.

Even the name comes from the craft. Dilution — the water introduced as ice melts during shaking or stirring — is an essential part of balancing a cocktail, making it an appropriate name for a bar that takes its drinks seriously.

At the heart of Dilution is owner and bartender Carl, a well-known figure on Suzhou’s cocktail scene. Cool, knowledgeable and fluent in English, he’s equally comfortable mixing established classics or creating something around your individual tastes. Not sure what to order? The cocktail list mixes classics with more inventive creations. Recent recommendations have included a Rice Colada, combining rum, rice, melon and coconut; a Jasmine Gin Fizz incorporating jasmine tea; and the historic New Orleans classic La Louisiane. The menu changes periodically, giving regulars something new to come back for.

Dilution has a speakeasy feel from the moment you arrive, with a hidden entrance leading into an intimate, very dimly lit bar. Inside, bar and sofa seating create a relaxed, understated atmosphere made for good cocktails and conversation. You might even find Tom and Jerry playing on the TV — a quirky little touch that somehow fits the place.

Located at Fenglong City Life Plaza, it’s a short walk from Suzhou Contemporary Art Museum Metro Station (Line 8).
